"Galinha Mourisca" to celebrate Camilo in March, on the 14th, 15th and 16th
Vila Nova de Famalicão is celebrating the bicentenary of the birth of one of the great figures of Portuguese literature - Camilo Castelo Branco, born on 16 March, 1825.
Although the focus of each of his texts is not at all on gastronomy, Camilo, who was always excellent at integrating elements of popular culture into his work, is, in ‘O Santo da Montanha’ published in 1866, who, between spirituality, faith and popular devotion, highlighted the flavours of ‘Galinha Mourisca’.
‘We make greaves; we go to the dripping; we pour it into a bowl, where the chicken is carved or half-roasted; on top we pour a splash of white wine, a little vinegar and almost no water; then bay leaves, cloves, pepper, egg yolks, slices underneath and lemon slices on top. It's time to eat and scream for more!...’ It's with these succulent details that Camilo describes the dish, which he invites you to taste in celebration of the bicentenary of his birth.
