Authentic flavours of regional cuisine, Papas de Sarrabulho and Rojões à Moda do Minho appear in gastronomic traditions as an excellent way of taking advantage of all the parts of the pig and preserving them for long periods of time. They are dishes that have traditions that derive from ancient community practices, associated with the slaughter of the pig in rural areas of Portugal until the middle of the 20th century, almost always carried out in late autumn or early winter.
Papas de Sarrabulho and Rojões à Moda do Minho are the highlights of the 16th edition of the Gastronomic Weekends, promoted by Turismo do Porto e Norte, which Vila Nova de Famalicão is taking part in on 28 February, 1 and 2 March.
In addition to the dishes, there is the suggestion of Leite-Creme for dessert. Traditional to our cuisine, but also to many cuisines around the world, this is a delicacy that has crossed centuries and generations without ever going out of fashion.
It's true that cuisine, like everything else, is modernising and improving. However, these traditional and regional expressions persist and today, as in the past, they continue to be the territory's hallmark.
Each restaurant adds a special spice, a distinctive way of preparing the ingredients or even a different way of presenting the dishes, while preserving the region's distinctive flavours. Suggestion made, come and try it!

The Gastronomic Weekend in Famalicão takes place just as the city prepares for another carnival!
